Description: Ynyshir is one of only 17 restaurants in the UK to hold five AA rosettes and the menu is a blend of wild Welsh ingredients and Japanese flavours with particular focus on meat.
Gareth is a wonderfully meat-centric force of nature and stagiaires will learn a new appreciation of meat under him. He and his small team are constantly experimenting with new, cutting edge flavour combinations and consistently engage with diners from an open kitchen which also boasts two separate chef tables.
Hours: Lunch Service: 1pm, Dinner Service: 8pm
Covers: 22 maximum
Working Week: Four days on, three days off (closed Sunday and Monday)

“Staging is for every chef and I’ve done a fair few stages myself. I always say that you shouldn’t do a stage at a restaurant just because it’s famous. Think about what you want to learn.”
